‘Carrot Cake’ energy bites – the perfect solution when you need something sweet but healthy

Carrot Cake Ball Recipe

I have adapted this amazing Carrot Cake Ball recipe from one given to me by Medical Herbalist, Candice from Naturalibrium. They have saved me from many a guilty cake-fest and taste amazing. The kids love helping to make them (and eating them too!)

Makes between 18 and 24 ‘bites’

You will need

A large mixing bowl

A free-standing mixer or hands that you don’t mind getting sticky (this is where the kids can really help!)

Ingredients

1 cup oats (we eat gluten free, if this is important to you, please make sure to check the brand).
1/2 cup grated carrots
1/4 cup raisins or cranberries (cranberries give the bites a gorgeous jewel look but raisins feel more carrot-cakey!)
1/4 cup chopped or ground almonds

1/2 tsp cinnamon
1/8 tsp cloves

1/4 tsp nutmeg

(N.B. if you don’t have all the separate spices you could simply replace with approx 1 tsp mixed spice powder)

1/3 cup almond butter
1/4 cup maple syrup or honey.

 

To make the ‘Carrot Cake Bites’

First mix together all the dry ingredients to ensure that the spices are spread nice and evenly throughout the mix.

Next simply add the almond butter and maple syrup and mix to form a stiff mixture. If you don’t like getting messy then simply whack it all in a free-standing mixture and hit the button. If you have kids to help or like getting your hands in the mix, add it all to a bowl and use your hands to mix all the ingredients together.

Next use a teaspoon to scoop out small balls of mixture. Press the mixture firmly so that it sticks together and shape into small balls. Place on a silicone sheet or baking tray and leave in the fridge for about an hour to firm up.

 

And that’s it – enjoy!  (try not to eat them all in one go – that kinda defeats the object of making a healthy snack!).

N.B. if you want to boost the energy levels of these bars why not try adding a teaspoon of Macha powder (great for energy boosting) or even a teaspoon of raw cacao powder for a hint of chocolate goodness!
