These rich, decadent tarts are heavenly. Either make one luscious huge tart or lots of teeny tiny, greedy mouthfuls!
- 300 ml double cream lacto free cream works really well
- 2 tsp caster sugar
- 1 pinch sea salt you can leave this out but it really lifts the flavour to another level
- 50 gm butter unsalted and at room temperature - again lacto free butter works well
- 200 gm dark chocolate 70% cocoa solids minimum
Add the cream, sugar and pinch of salt into a pan and heat gently until just before boiling point
When it reaches this point, remove from the heat
Add in the softened butter and break up the chocolate (a great job for kids!)
Stir well to combine the ingredients - at this point it might not look that great! Hold your nerve at this point please!
In fact hold your nerve for 2-3 minutes then add the milk and stir again. At this point the magic happens and your mixture turns from 'meh' to 'marvellous.
Pour it into the tart cases whilst the mix is still warm and leave it to set. Job done!
If you have any mixture left over, tip it into some espresso cups or tiny bowls for rich and naughtly chocolate pots!
